I have found a new asset on the web for ESL teachers and administrators. The Modern Language Association has a map of languages spoken in the U.S.A. It is based on U.S.A. Census input. You can find out about how many persons in your county speak what languages. There are some surprises! Be patient as you go in and click. Some of the features take their time downloading, but the end results are fascinating.
